Lemon Rice

A tangy flavorful rice dish from South India.
To make this you will need: Basmati rice,Lemon,Mustard,Dried red chilli,Channa daal or Moong daal,Ginger,Green chilli,Urad daal, Curry leaves,Turmeric and Salt.

Start by cooking 2 cups of rice.

Add 1.5 Tbsp of salt and 6 cups of water let it cook slowly.

Meanwhile squeeze 1 Lemon and keep it aside.
Then chop 2 Green chillies

Don't forget to check your rice
Next chop 1 Tbsp of Ginger.
 
Once the rice is done ,drain it and add the lemon juice

Next in a skillet add 2 Tbsp of oil and add 1 Tbsp Mustard seeds.
2 Dried red chillies

1 Tbsp Channa daal or Moong daal
Green chillies

Ginger

and finally 1 Tbsp of Urad daal.
You have to add this at the end because it burns very fast.
Also now you can add peanuts if you like!

Give it a quick stir and add curry leaves

Then add 1/4 tsp Turmeric powder

1/4 tsp Asafoetida and toss it until they start to get nice and golden brown.

And throw in the cooked rice.
Mix it slowly until all the white rice gets a pale yellow color.

Serve it with raita and pappad .But I like to have this with a piece of fried chicken

Ingredients
  • Rice - 2 Cups
  • Salt - 1.5 Tbsp
  • Lemon - 1
  • Mustard seeds - 1 Tbsp
  • Dried red chilli - 2
  • Green chilli - 2
  • Ginger - 1 Tbsp
  • Channa daal or Moong daal - 1 Tbsp
  • Urad daal - 1 Tbsp
  • Peanuts - 1Tbsp (optional)
  • Curry Leaves - 6
  • Turmeric - 1/4 tsp
  • Asafoetida - 1/4 tsp 
Directions:
  • Cook rice with salt and lots of water.
  • Drain it and add the juice of 1 lemon and mix it well.
  • Chop green chilles and ginger.
  • Next heat oil in a skillet and add mustard seeds,dreid red chillies,green chillies,ginger,toor daal,urad daal,curry leaves,turmeric and asafoetida.
  • Give it a quick stir and add the cooked rice.
  • Mix it throughly and serve it with raita and pappad.

Mexican Coffee Bun

A delicious bun that is baked after the icing is done !!
 
Ingredients you need for making the bun: Bread flour,Sugar,Salt,Yeast,Butter,Water and Egg

 
Start with adding 2 Cups of Bread flour

 
3 Tbsp of Sugar

 
and 1/2 tsp Salt

 
Sift it all together in to a bowl

 
Then  add 1 1/2  tsp of Dry yeast ..

 
and mix it together.

 
Now crack an egg..

 
and add it to the dry ingredients.

 
Next add 1/4 cup of Water

 
and 2 Tbsp of room temperature Butter

 
Mix it by hand to thoroughly combine the ingredients.

 
Next lightly oil the bowl and place the dough in the bowl.Close it and let it sit and rise for an hour.

 
When the dough is rising we can make the icing .
And for the icing you will need Butter,Powdered Sugar,Eggs,All purpose flour,Instant Coffee and Water

 
Add 7 Tbsp of room temeperature Butter in to a bowl.

 
To this add 1/2 cup of Powdered sugar

 
2 Eggs
and 3/4 cup All purpose flour.Mix it together until just combine.

 
Next add 2 Tbsp of Instant Coffee to 1 Tbsp of water..

 
and add it to the icing.

 
And now let's get back to the dough.This is the dough after 1 hour

 
Divide them in to eight evenly-sized balls of dough.

 
Then roll in to small circles.

 
Next, place a small cube of butter in the center of each  dough

 
and wrap it up.

 
Make sure you seal it tightly.You dont want the butter to leak while baking.

 
Now the fun part ! Transfer the icing in to a piping bag or a Ziploc bag with a small hole cut into one corner and start piping the icing in circles around the bun.

 
Cover almost half of the bun with icing .Don't worry if the piping is not perfect..It's all going to melt in a few minutes ..
Now bake it at 400 degree F for 15 minutes.
 
And there it is.THE MEXICAN COFFEE BUN !!
The icing is all melted and covered the entire bun..

 
It is crispy on the outside ..

 
And soft and fluffy and buttery on the inside

 
Eat them right out of the oven !

Ingredients for the bun :

  • Dry Yeast- 1 1/2 tsp
  • Egg- 1
  • Water- 1/4 Cup
  • Butter- 2 Tbsp
  • Butter cubes (for filling)
Directions:
  • Sift together bread flour,sugar,salt and dry yeast.
  • Add a beaten egg in to the mixture.
  • Add water and room temperature butter.
  • Mix the dough and keep aside to rise for 1 hour.
  • When the dough is double the size divide it in to 8 balls.
  • Roll it in to small circles.
  • Place a cube of butter in each dough.Wrap it and seal it. 
Ingredients for the icing :
  • Butter- 7 Tbsp
  • Powdered sugar- 1/2 Cup
  • Egg- 2
  • All purpose flour- 3/4 Cup
  • Hot water- 1 Tbsp
  • Instant coffee- 2 Tbsp
Directions:
  • Combine butter,sugar,eggs and all purpose flour
  • Combine instant coffee and water.
  • Add it to the mixture and mix it until combined.
  • Pipe it on to each dough until it is half covered.
  • Bake it at 400 degree F for 15 minutes.
  • Serve hot.
