Mixed Berry Smoothie

 A quick and easy breakfast with cranberry juice and berries !


 You will need Cranberry juice, Frozen mixed berries, Yogurt and Honey or Sugar.

 Begin by adding a cup of Yogurt to your blender.

 Followed by 3/4 Cup frozen mixed berries

 and 3/4 Cup Cranberry juice.

 Blend for a few seconds on high speed or until ingredients are thoroughly combined. 

I am also adding 1 Tbsp of Wheat germ.Wheat germ is an excellent source of many vitamins and minerals: vitamin E, most of the B vitamin group, folic acid, and a number of minerals such as iron, calcium and zinc.
Add 1 Tbsp Honey or more for sweetness and blend it again for few seconds.

 Pour into a glass.Grab a straw and sip.
Feel the cranberry love.

RECIPE  (Servings:2)

Ingredients:
Frozen Mixed berries - 3/4 Cup
Cranberry Juice - 3/4 Cup
Yogurt - 1 Cup
Honey or Sugar - 1Tbsp

Directions:
Combine all ingredients in a blender.
Blend for a few seconds on high speed or until ingredients are thoroughly combined.
Serve cold.

Vegetable Fried Rice

 
 
Simple to make and full of flavor.You will definitely want to try this !!
 
Let me begin by sharing few secrets to fabulous fried rice:
  • Use a day old cooked rice preferably jasmine rice.Warm or hot rice will release its starch when fried and make our fried rice mushy.
  • A hot wok.A wok is ideal but a large pan or a skillet will do.
  • Use Sesame oil.It gives your fried rice a different flavor.
  • The fried rice with oyster sauce is simply irresistible.
  • Do not put too many veggies in ratio to rice or the rice will get soggy.
  • Do not crowd the pan or the veggies will steam instead of cooking crisp and make the final dish soggy.
  • Cook 1 to 2 servings at a time.
 
 
 
Let's start by making the rice.You will need any medium or long grain rice,water and salt.
 
 Take 4 cups of water in a pan and bring it to boil.

 Add 1 Tbsp of Salt

 When the water is hot, add 3/4 cup of rice.

 Once the rice is fully cooked..

 Strain it and

 transfer it to a bowl and refrigerate it for atleast 5 hours or overnight.
To make the fried rice you will need : Cooked rice,Sesame oil, Garlic, Onion, Green chilli, Carrot, Peas, Egg, Soy sauce , Oyster sauce, Fish sauce(optional), Scallions and Black pepper.


 Start with a carrot . Chop it .You will need 2/3 cup of chopped carrot.

 Next chop half a medium onion.You will need 1/4 cups.

 Next chop a garlic and green chilli.

 and finally 1/4 cup scallions.



 Heat 2 Tbsp of Sesame oil in a wok

 Add the garlic

 Onion and green chilli.

 Next add the carrots and fry it until they are tender.

 Meanwhile in another skillet scramble an egg.

 When the carrots are cooked,it might take 2 minutes or so, add 1/2 cup frozen peas

 and egg and stir the around for a couple of minutes.

 Add in 1 tsp Soy sauce

 1 tsp Oyster sauce

 1 tsp Fish sauce, if using fish sauce.

 Then add the cooked rice

 and using a spatula mix the rice with all other ingredients.

 Finally sprinkle 1/4 tsp Pepper

 and 1/4 cup Scallions.

  And once more stir it and cook it for 2 minutes.

Dig in !

RECIPE ( Servings - 2)

Ingredients :

For the rice
  • Any medium or long grained rice preferably jasimine rice - 3/4 Cup
  • Water - 4 Cups
  • Salt - 1 Tbsp
For the fried rice

Sesame oil - 2 Tbsp
Garlic - 1 Tsp
Onion -1/4 Cup
Green chilli - 1 chopped
Carrot - 2/3 cups ( 1 carrot chopped)
Peas - 1/2 Cup
Egg - 1 scrambled (optional)
Soy sauce - 1 tsp
Oyster sauce - 1 tsp
Fish sauce - 1 tsp (optional)
Cooked rice - 1 1/2 cups(a day old)
Scallions - 1/4 cup
Pepper - 1/4 tsp

Directions :
Cook rice in water with salt.Once it is fully cooked, strain it and refrigerate it atleast for 5 hours or overnight.
For making the fried rice,in a wok or large skillet, heat oil over medium heat.
Add garlic,green chilli and onion and cook, stirring occasionally.
Then add the chopped carrots.Stir fry until tender.
Mean while scramble an egg.
Add the egg and peas to the wok and stir fry until thoroughly heated.
Now add the rice,soy sauce,oyster sauce and fish sauce and blend all together well.
Finally sprinkle chopped scallions and pepper and enjoy hot.
