Banana Crumb Muffins

Start your day with an awsome muffin and a good cup of coffee !

To begin take 1 Tbsp of butter and keep aside...you will need this later...

The ingredients for the first part  : All purpose flour,Baking soda,Baking powder and Salt.


Mix together 1 1/2 cups all-purpose flour,1 tsp baking soda,1 tsp baking powder and
1/2 tsp salt.

Ingredients for the second part: Banana,Egg,Sugar and Vegetable oil.

Throw 1 egg in to a bowl...


Beat until it is  fluffy...

Add 1/3 cup oil...

Pour 3/4 cup sugar...

 Keep going until it's all mixed.




BANANA !!

1st method : Chop the banana and throw it in to a blender...

Blender will do its job in few seconds..

2nd method : Mash the banana with a fork .


It will take more time and hardwork...

Mash 3 bananas and pour it to the eggs...I went with the first method...

Mix it thoroughly...


Now add the dry ingredients to the banana.Stir the mixture very gently...

Be careful not to overstir!

Place the liners in a muffin pan...if you dont use the liners then grease the pan generously with the cooking spray...

and scoop the batter in to the muffin pan.

And the last part ....(Dont skip this.It is important..! )

Take 1/3 cup brown sugar...

2 Tbsp all purpose flour...

1/8 tsp ground cinnnamon...

Stir it all together...
And finally the butter...it will be soft by the time you reach this step..

Stir this together. It should mostly be dry, but a little moist from the butter.

Sprinkle it generously onto the top of each muffin.The more...the better..

Now just bake the muffins for about 20 minutes at 375 degrees.

Mmmm. Yum. Warm muffins.


They have really nice texture ..soft and spongy..

Servings : 12 big muffins
Ingredients :
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
 Directions :
  • Bring 1Tbsp of butter to room temperature.
  • In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.
  • In another bowl, beat together bananas, sugar, egg and melted butter.
  • Stir the banana mixture into the flour mixture just until moistened.
  • Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon and butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.               
  • Bake in preheated oven for 20 minutes at 375 degrees F, until a toothpick inserted into center of a muffin comes out clean.
