A side for rice made with as many vegetables you can find in your fridge.
And here is a list of vegetables you can use in Avial.
- Plantain
- Drumstick
- Beans
- Carrots
- Ivy gourd/ Kovakai
- Yam/Chena
- Ash gourd/Kumbalanga
- Pumpkin/Mathanga
- Snake gourd/Padavalanga.
Now slice 4 Green chillies.
2 tsp Cumin seeds
Now grind it in to fine mixture.You will feel like adding water...But don't add water.You need a dry mixture.Not a smooth paste.
Give it a quick stir and cook it closed for 3 to 5 mintues in low flame.
Again give it a quick stir and remove from the heat.You don't have to cook more than a minute after adding yogurt.
RECIPE
Servings: 8 (for sadhya) and 4 (for a regular meal)
Ingredients:
- Vegetables - 2 cups
- Green chilli- 4
- Turmeric powder - 1/2 tsp
- Salt - 1/2 tsp
- Water - 1 cup
- Grated coconut-1 cup
- Cumin seeds - 2tsp
- Garlic - 1
- salt - 1/2 tsp
- Curd - 2 1/2 Tbsp
- Coconut Oil - 2 Tbsp
- Curry leaves - 5
Directions:
- Cook the vegetables, green chilli, turmeric powder,salt and water in a pan until they are soft and tender.
- Meanwhile grind coconut,cumin seeds,garlic and salt without water.
- Add it to the cooked vegetables and toss gently.Cover it and cook it for 5 minutes.
- Then add the yogurt and mix well and remove from the stove.
- In another pan heat some coconut oil and add curry leaves.
- Pour it on to the avial. Serve hot
