Avial

A side for rice made with as many vegetables you can find in your fridge.
Here is what you need for making Avial : Variety of vegetables, Green chilli, Turmeric, Salt, Grated coconut, Cumin seeds, Garlic, Yogurt, Coconut oil and Curry leaves.

And here is a list of vegetables you can use in Avial.
  • Plantain
  • Drumstick
  • Beans
  • Carrots
  • Ivy gourd/ Kovakai
  • Yam/Chena
  • Ash gourd/Kumbalanga
  • Pumpkin/Mathanga
  • Snake gourd/Padavalanga.
 
Begin by peeling and cleaning all the vegetables.You will need 2 1/2 cups of vegetables.

Then cut the vegetables in to  thick sticks.


 
 Now slice 4 Green chillies.

Add all the vegetables and green chillies to a hot pan.

with 1/2 tsp Turmeric

1/2 tsp Salt


and 1 cup Water and cook it till the vegetables are nice and tender.


Meanwhile combine 1 cup Grated coconut


2 tsp Cumin seeds


1/2 tsp Salt


and 1 Garlic.


Now grind it in to fine mixture.You will feel like adding water...But don't add water.You need a dry mixture.Not a smooth paste.
After 10 minutes, add it to the vegetables.

Give it a quick stir and cook it closed for 3 to 5 mintues in low flame.

Finally add 2 1/2 Tbsp of Yogurt

Again give it a quick stir and remove from the heat.You don't have to cook more than a minute after adding yogurt.

Next toss some curryleaves in 'COCONUT OIL'.You should  use coconut oil if you want to get that real taste of Avial.

And pour it on to the Avial.

 Try it !!

RECIPE

Servings:  8 (for sadhya) and 4 (for a regular meal)

Ingredients:
  • Vegetables - 2 cups
  • Green chilli- 4
  • Turmeric powder - 1/2 tsp
  • Salt - 1/2 tsp
  • Water - 1 cup

  • Grated coconut-1 cup
  • Cumin seeds - 2tsp
  • Garlic - 1
  • salt - 1/2 tsp
  • Curd - 2 1/2 Tbsp

  • Coconut Oil - 2 Tbsp
  • Curry leaves - 5

 Directions:
  • Cook the  vegetables, green chilli, turmeric powder,salt and water in  a pan until they are soft and tender.
  • Meanwhile grind coconut,cumin seeds,garlic and salt without water.
  • Add it to the cooked vegetables and toss gently.Cover it and cook it for 5 minutes.
  • Then add the yogurt and mix well and remove from the stove.
  • In another pan heat some coconut oil and add curry leaves.
  • Pour it on to the avial. Serve hot
