One of the traditional Kerala dishes with pumpkin and red cowpeas.
Begin by soaking 1/4 cup of red cowpeas
in 1 cup of water for 4 to 5 hours.
Then transfer it to a pressure cooker
Add 1 cup of water
1/4 tsp Turmeric
and 1/2 tsp Salt.And pressure cook it for 1 whistle.
Meanwhile, take 1/4 Cup Grated coconut
and 1/4 tsp Cumin seeds in a grinder.
Next chop a Garlic
3 Green chilles
and throw it in to the grinder with 1/4 tsp Pepper.
Add 1/4 tsp Turmeric
Grind it in to a dry mixture and keep aside.
Next peel, clean and cut the pumpkin in to cubes.You will need 1 Cup of Pumpkin.
Once the red cowpeas if fully cooked..
add the pumpkin and again pressure cook it until the pumpkins are soft and tender.
By that time we can prepare the last step.Add 1/2 tsp Mustard seeds to 1 Tbsp Coconut oil.
Followed by 2 Dried chilly
and few Curry leaves.
Finally add 1/4 Cup Coconut and fry it till the coconut is golden brown.
Now open the pressure cooker and pumpkin will be fully cooked.
Slightly mash the pumpkin cubes with the back of a spoon ..
and add the grinded coconut mixture and cook it for another 5 minutes.
pour it in to the curry
and give it a quick stir.

RECIPE
Servings : 4 (for Sadhya) 2 (for regular meal)
Ingredients:
- Vanpayar/Red cowpeas - 1/4 Cup
- Water - 1 Cup
- Turmeric - 1/4 tsp
- Salt - 1/2 tsp
- Pumpkin cubes - 1 Cup
- Coconut - 1/4 Cup
- Cumin seeds- 1/4 tsp
- Chilli - 2 or 3
- Garlic- 1
- Pepper- 1/4 tsp
- Turmeric - 1/4 tsp
- Coconut oil- 1 Tbsp
- Mustard - 1/2 tsp
- Dried red chilli - 2
- Curry leaves - few
- Coconut - 1/4 cup
Directions :
Pressure cook the red cowpeas till one whistle with salt and turmeric.
Add the cubed pumpkins and cook it again for few minutes.
Once cooked, smash the pumpkin cubes with the back of the spoon.
Grind coconut, cumin seeds, green chilli, garlic,pepper and turmeric and add it to the pumpkin and cook it for 5 minutes.
Heat coconut oil and add mustard seeds, dried red chilli, curry leaves and coconut and fry the coconut till golden brown.
And the add it to the curry.Serve hot.
